Because the plate of the Migali C-B36 griddle is made of ³⁄₄-inch-thick polished steel, it heats evenly and quickly. The unit comes equipped with three burners, each with a powerful 30,000-BTU capacity, but establishments in high altitudes may require adjustments in order to achieve this BTU output.
